I adore potatoes, and not just because of my PhoneSpuds. Do you also find yourself watching people cook online? It's really the go-to place to find new recipes and delight your tastebuds. Potatoes sometimes get a bad rap, but they are a staple at our house (and so affordable!).
And that's why this week, I am writing about:

- Yummy Potato Wedges With Dip by @tasteof_the_street
This recipe, originally posted on May 17, 2022, now has 2.5 million views. Many, many people have made this one, and it's at the top of my list because - hello?! it includes a DIP. Who doesn't want a dip for their potato wedges?! (think mayo / mustard / mayonnaise and spices). One commenter used quartered onions and potatoes to serve together with steak. Sounds like a definite win to me.
Another wedges recipe (yum) and it has 1 million views. They look perfect, and commenters mention how crispy and flavorful they are. Unlike the recipe above, you boil these wedges briefly before baking or frying. Really smart if you have a few extra minutes and want to surprise your family with crispy, savory potato wedges.
Sitting at almost 300k views, this recipe takes a little more planning than potato wedges, because you need maida (a wheat flour common in Indian cooking), coriander, and a green chili. That said, if you have everything the recipe says it only takes 15 minutes to put together and 25 minutes to cook. They LOOK impressive, and if you like spice, you may find this one more satisfying.
What are we learning? That people LOVE potato wedges. And why shouldn't we?! This recipe involves using a mix of corn flour, all-purpose flour, and rice flour to get a great crisp. You use salt, chili flakes, oregano, and garlic powder to season them. If don't mind gathering the different flours to make the crisp, or you have them on hand already, this looks like another winner for dinner or snack time.
With 241k views, this Indian recipe is for double fried baby potatoes. The cook calls this potato snack "addictive," and I can see why - the spices! Obviously, a fried potato is gonna be yummy on it's own, but this recipe also calls for red chili, coriander, turmeric, cumin, salt and dry mango powder. I didn't even know mango powder was a thing until I started looking up these recipes. That's got to be great, right?
Okay, the next recipe has 145k views, and this one looks EASY and FUN. You get to smash potatoes. First, you boil them. Then, you smash them on a lined baking sheet. Bake. Add cheese. Bake again, and then top with sour cream or whatever else floats your boat. This is very potato skin-esque.. if ya know what I mean. If you're looking for new football snacks - check this one out.
Yep! You read that correctly. Potato. Lasagna. It's a thing, and it looks fabulous. This recipe, originally posted in August of 2020, has 57k views. The chef claims that it is just as good as traditional lasagna, "if not better." I am absolutely going to try this one. This is like potatoes au gratin, but with a twist. One thing that really makes this look intoxicating to me, is that they use nutmeg to season the cream sauce... and if you've never had nutmeg in mac & cheese or other creamy, savory things, it is truly incredible (unless you don't care for nutmeg). This recipe is also your main course, and not a snack or side dish. The recipe also calls for ham, but it could easily be vegetarian if that's your jam.
According to @foodypopz, this recipe is "The most perfectly crispy, garlicky buttery potato snack you will ever try." Sign me up for that! This recipe does involve peeling the potatoes, so it's going to take a bit more commitment than wedges. That said, they look amazing, and peeling potatoes can be highly invigorating and therapeudic in my opinion. This one calls for corn flour and nutritional yeast, also. You may not keep those ingredients around, but they are easy to get in most grocery stores. 36,000 people viewed this one.
With almost 28k views, this chef suggests these are a nice change from the normal potato wedges that are out there. Think mashed potatoes with herbs, formed into rectangles and then fried. Can't be bad, right? Ha. I think if I try this one, I'll bake them on each side; I like to eliminate frying whenever possible (or I'll try the air fryer). These also include CHEESE, so that truly sets the potato stripes apart from the regular potato wedge recipes.
Another great recipe from @homecookingshow (#3 above also). Almost 24k people viewed this recipe, which looks like another winner. These are similar to potato skins appetizers at a restaurant and also similar to twice-baked potatoes, because the "stuffing" includes the scooped out potato. They also add jalepeno and chopped onion. These could easily be tweaked to stuff your potato as you please!

Now for a few caveats...
I purposefully did not include potato chip recipes, because the vast majority of us are simply not going to pull out a mandolin and make our own potato chips.
Also, there were several repeat recipes, and when that was the case I included the one with the most views and left the other out.
So, as you're looking to eat more potatoes with cold weather coming. These recipes could give you a good start for changing up your normal potato recipes or trying something new!
